Waldorf Pasta Salad
A mixed salad of pasta shapes, celery, apples raisins and walnuts
Ingredients
½ red onion, sliced thinly
250g (8oz) Marshalls pasta shapes
3 tablespoons vinaigrette dressing
2 celery sticks
2 red apples, cored and sliced
juice of 1 lemon
40g (2oz) raisins
50 (2oz) walnut pieces
For the dressing:
3 tablespoons mayonnaise
3 tablespoons single cream or natural fromage frais
a little milk (optional)
a few green or red frilly lettuce leaves, to serve
salt and pepper
Method
For a less intense raw-onion flavour, cover the onion slices in cold water and leave them to soak for 30 minutes. Drain them and pat dry.
Meanwhile, cook the pasta according to the pack instructions. Drain and toss with the vinaigrette dressing and season well. Leave to cool.
When cold, mix with the onion, celery, apples, lemon juice, raisins and walnuts. Beat the dressing ingredients together. If you prefer a lighter dressing, mix in a little milk. Stir in and chill lightly.
Line a platter or salad bowl with the lettuce leaves and spoon the salad in the centre.
Preparation time: 12 minutes plus 10 minutes cooking and chilling.
Freezing not recommended.
