Sensational Garlic Spaghetti
Roasted garlic is a fantastic experience! And what is better than one roasted clove? Forty roast cloves! Garlic grower Gilli Allingham of The Really Garlicky Company made this delicious chicken dish with forty cloves of garlic. This recipe does not require quite as many as that, but the combination of roasted and fried garlic with a bit of fire from the dried chillies makes this a very easy but truly sensational garlic pasta dish.
Ingredients
250g (8oz) Marshalls Spaghetti
6 large heads of garlic
3 cloves of garlic, cut in slivers
6 tablespoons olive oil
red chilli flakes for colour and flavour
Method
1. Slice off the neck of each garlic bulb to just expose the cloves. Put the bulbs in a shallow ovenproof dish lined with foil. Sprinkle with three tablespoons of olive oil and bake in a preheated oven at 180°C, 350°F, Gas Mark 4 for about an hour – till the cloves are bursting out of their skins.
2. Cook the spaghetti according to the pack instructions
3. Gently fry slivers of garlic in the remaining three tablespoons of olive oil in a frying pan, then pop the baked cloves out of their skins and add to the fried garlic and stir till you have a glorious golden garlicky mush. Toss with the drained spaghetti and sprinkle with red chilli flakes and serve.
