CREAMY LEMON, ASPARAGUS AND PEAS SPAGHETTI
A lovely creamy and sharp dish
Ingredients
Serves 4
Preparation and cooking time: 30 minutes
Freezing not recommended.
200g (7oz) Marshalls Spaghetti
1 onion, finely chopped
100g (4oz) fresh asparagus tips cut into 3cm (1 inch) pieces
125g (5oz) frozen peas
250mls (8 fl oz) double cream
1 egg yolk
1 lemon, finely zested
50g (2 oz) parmesan cheese, grated
Method
1. Cook the pasta according to pack instructions.
2. Meanwhile, melt the butter in a small pan, add the chopped onion and cook gently till softens and turns golden.
3. Cook asparagus in a pan of boiling salted water for three minutes till just tender. Drain and add the cooked onion.
4. Beat the egg yolk into the cream and add to the asparagus and onion and cook gently till the sauce thickens.
5. Add grated lemon zest and grated parmesan and toss with the spaghetti and serve.
